In contrast to the Blood Oranges and Clementines in this collection, the story of Yuzu is that of shifting geographies throughout its centuries long spread, from wild origins in Tibet and Central China to cultivation in Japan and Korea. Rather than being tied strongly to one specific time and place, Yuzu has been a part of the cuisine of both cultures through the past millennium of culinary history. Its flavor is often described as a combination of other citruses - including grapefruit, mandarin and lime - but the simultaneously sweet and sharply tart Yuzu has unmistakably fragrant floral depths as well, with delicate notes of honey and slightly bitter herbal undertones.
